The Boston Herald reported the Boston-based chain will enter the quick-serve business beginning next year with the launch of Uno Due Go at local airports, malls and other locations. The company plans to open a couple hundred locations in the next few years, with the first two scheduled to debut next spring at Dallas/Fort Worth International Airport. Other locations being eyed for the concept include college campuses, downtown sites and inside existing Uno Chicago Grills; some locations will also be sold as franchises.
Uno Restaurant Holdings Corp. chief executive Frank Guidara describes the concept as a “mini” Uno Chicago Grill. Its menu will feature deep dish and flat bread pizzas, sandwiches and self-serve soups, likely at prices that are lower than those at Uno’s full-service, casual dining restaurants. Breakfast wraps and pizzas and other breakfast items also will be sold. The food will be both made to order and made in advance to stay ahead of customer rush times.
“What’s great about this concept is its versatility,” Guidara said. “It fits anywhere. It will be far less of an investment to open. You almost can’t open casual dining restaurants in urban locations anymore because rents have skyrocketed, but you could open an Uno Due Go.”
